Pork Medallion (Lean)
Correct Weight pork medallions are lean and super healthy.
A simple recipe is pork medallions with lemon and capers. Press some coarse ground pepper onto both sides of 2 pork medallions and heat a little olive oil in a pan over medium heat. Season pork with salt if desired cook until just cooked through, about 4 minutes per side. Transfer medallions to plates and keep warm. Add half cup of chicken stock and a little lemon juice to the pan and boil until reduced by half (about 7 minutes). Whisk in a tablespoon butter or margarine, then had a teaspoon of capers and 4 chopped lemon segments and pour sauce over pork.
